Enhancing Functional and Nutritional Characteristics of Multigrain Mix by Incorporating Jamun Seed Powder

The jamun seeds are considered as waste products from industry and usually thrown out. have enormous nutraceutical properties they contain bioactive compounds. present study was designed to develop a multigrain mix incorporating seed powder. Efforts were made prepare powder ing combinations of whole wheat flour, defatted soya foxtail millet prepared by at 2, 4, 6, 8, 10 % levels subjected organoleptic evaluation. sensory results showed that 4 incorporation secured high score for taste, flavor overall acceptability. analyzed nutritional found 11.21 percent moisture, 3.23 ash, 59.79 carbohydrate,1.65 fat, 19.45 protein, 3.25 fiber, 105.62 mg/100g calcium, 6.32 iron. glycemic index incorporated in be 51 (low index) it is suitable consumption diabetic people.
